This cold orzo salad is fresh and easy for summer! Perfect to serve with fish or chicken!
Serves 12
2 Boxes orzo
2 Cups feta cheese
2 English cucumber, seeded, peeled and chopped
2 Pints grape tomatoes
1 Cup fresh parsley
8 Tablespoons lemon juice
1/4 Cup olive oil or more to taste
salt & pepper to taste
*Cook orzo according to box directions, drain and mix w the olive oil.
*Peel cucumbers, slice in half, spoon out seeds, chop into pieces.
*Wash and cut each grape tomato in half.
*Wash and chop parsley.
*Add lemon juice (more to taste), feta cheese, more olive oil to taste.
*Add salt and pepper to taste.
