Father's Day 2009!


Adam Perry Lang's new cookbook, Serious Barbecue is the perfect Father's Day gift! Adam owns Daisy May's BBQ in New York City and he has spent a lot of time in New Mexico, which means delicious BBQ w a "serious" kick! His way w meat is multi-layer flavoring. He uses seasoning blends, glazes and resting butters. Your mouth has to be watering!

His recipes are more time consuming, but very much worth the effort! Dad is special and he will appreciate your time and the tasty results! Give it a try! The below recipe works w extra firm tofu as well, low heat on grill. With all the time and effort, serve steak over greens or w a simple grilled vegetable.

Hanger Steak w Thyme, Crushed Red Pepper & Garlic


Marinade
2 teaspoons crushed red pepper flakes
2 teaspoons boiling water
3/4 cup extra virgin olive oil
8 garkic cloves, peeled and sliced thin
1 1/2 tablespooons soy sauce
1 1/2 tabelspoons red wine vinegar
2 thyme springs

Seasoning Blend
1 tablespoon garlic salt
1 tablespoon ground frsh black pepper
1 1/2 teaspoons mild chili powder such as chimayo or ancho

Coumpound Butter (Combine all in bowl and refrigerate if not using right away)
1 pound unsalted butter softened
1/4 cup finely chopped flat leaf parsley
2 tabelspoons shallots
1 garlic clove minced
zest of 1 lemon
2 teaspoons ground black pepper
2 teaspoons kosher salt

Have Ready:
1/4 cup canola oil
1/2 recipe below compound butter room temperature
1/2 bunch rosemary
1/2 bunch thyme

Place pepper flakes in small bowl and pour the boiling water over them. Let sit for 2 minutes to rehydrate the flakes. Include all marindae ingredients to flakes and water.

Place steaks in large zip lock plastic bag and pour marinade in bag. Roll bags to coat meat evenly. Refrigerate for 2 hours minimum or over night.


*Preheat grill to high

*Combine seasoning blend ingredients and remove steaks from bag.

*Rub steaks w seasoning blend and then brush w canola oil.

*Place steaks on grill and decrease heat to medium and leave grill lid open. Let sit for 2 minutes and flip steaks and do 2 more minutes w lid off.

*Flip again and cook lid down 3 minutes each side for medium rare, brush w compound butter each time you flip meat, adding the thyme and rosemary bunches on top for added flavor.

*Remove steaks from heat and let rest for atleast 5-8 minutes.

*Slice meat on diagonal against the grain and serve.

*The marinade and seasoning works well w extra firm tofu, serve over organic greens! Saute tofu in pan or grill over lower heat.
